Vegetable biriyani: –
biriyani rice- kaima,basmathi,..
kaima is better for biriyani
1 kg of rice double the water.
(if 1kg of rice=2cups then add 3& 3/4 cup of water).
coconut oil- 4-6 spoon
adding oil is better it helps to prevent sticking of rice and also gives flavour.
lemon-1/2 lemon helps from sticking of rice.
nutmeg- 2-3 nos
cinamon – 5 to 6 nos
cardomon- 4-6 nos
cloves- 4-6 nos
peppercorn- 8-10 nos
bay leaf- 2 to 3 etc.
wash and drain the rice. soak it for 1/2hr its optional.
take the pot add ghee and add all the spices and saute till gets the flavour. then add the water. when water starts boil add the rice. add salt. then add 80% of ghee and add oil 5 to 6 spoons. then Squeeze half lemon. put it in high flame for 3 to 5 min after that keep it in low flame..always check the rice twice and toss the rice. dont over cook the rice.
transfer the rice and kept aside
rose water essence
oil-add 3-4 spoon
ghee-1 to 2 spoon
onion- 8 to 10 nos
tomato- 4 to 5 nos
green chilly paste- take 6 to 8 chilly and make a paste
ginger garilc paste
pepper powder -1 teaspoon
biriyani masala powder (pack)- 3 -4 spoons
curd thick- 3 to 4 spoons
veggies- carrot,green peas,capsicum,beans etc..
if adding cauliflower boil it separately.
add oil and ghee in a pan add the sliced onions and saute till translucent. add the ginger garlic paste and chilly paste. saute well. Add tomatoes and cook till mushy. saute well then add the turmeric powder,pepper pwdr and biriyani masala cook 2 min. then add all the veggies.. cook well..add little biriyani masala. add the curd mix well. adjust the salt and add 1/2 lemon juice. switch off the flame.
take the same biriyani pot transfer all the rice in to another pot or plates.
add the veg masala in to the pot. spread it then add half rice and spread. add little corriander leaves mint cashews raisins onions then add 1 spoon ghee and sprinkle very little drops of essence.
repeat the process.. and cover with a lid for 5 min.
